The Jennings Christmas festival includes a pageant, bonfire, a gumbo cook-off wit cooking starting at ten and judging at 4:30. The entry form is below. 16TH ANNUAL GUMBO COOK OFF

Set-up and cooking begins anytime after 10:00 a.m. Gumbo sales begin at 4:30 p.m.
Judging at 4:30 p.m. Winners announced on stage at 6:30 p.m.

Chicken and sausage gumbo is the only kind of gumbo being cooked for competition.
2.
Bring everything that you will need to cook the gumbo and rice on site.
3. YOU MAY BROWN YOUR CHICKEN PRIOR TO ARRIVAL AT THE PARK, BUT THE
GUMBO MUST BE COOKED ON SITE. FAILURE TO DO SO WILL DISQUALIFY YOU...You may
use commercially made roux if you choose to. Please consider cutting your chicken and sausage into
bite size pieces, due to the size of the sample bowl (12 oz.).

4. Sales or samples ofpotato salad are prohibited.

5. You are allowed a lOX 10 space. You must provide your own lOX 10 tent and clamp lights.
Power will be available for each tent.

There is a $50 registration fee. Upon your arrival at the Cook-off you will get your $50 check back. In the
past, 5 teams registered to participate, but only 2 showed up. The other 3 didn't even let us know they
weren't coming. There was a great shortage of gumbo to sell to a crowd that had come to the park
especially for gumbo. Hopefully the registration fee will encourage teams to show up.

After the judging at 4:30 P.M., you may sell samples of your gumbo to recoup some of your
expenses. Tickets for the samples will be sold at the Jennings Festival Association table for $1.00 per (12
oz.) bowl. The Festival Association will furnish the bowl and spoon. At the conclusion of the festival
you will tum in the tickets of the samples at the Festival table and you will be reimbursed 50 cents on
every dollar sold.

The winners will be announced at approximately 6:30 p.m. on stage.

NOTICE
We have no idea how many people that you should prepare to cook for. We expect between 1,500 ~ 2,000 people to attend.
There wil1 be food booths selling things like red beans and rice, onion blossoms, burgers, cold drinks, hot chocolate and the
regular items sold by festival vendors. Each cook-off participant is required to prepare at least 10 gal10ns of gumbo to sell.
Each year many of the cooks run out. So the Festival committee is asking the cooks to make enough so that everyone can eat
some. Sales could be really good, especially if the weather is cold.

The parade line-up is on South Market Street at the corner of South Main.
Enter the lineup from South Cutting. There is no designated lineup order.
If you are entering to be judged« you must have your entry number displayed
on the front passenger side of your entry.

If your entry is a marching unit, have someone in the front right area of the unit display the number.
The judges will be located in front of the Strand Theatre. The lineup deadline is 5:00 p.m. There is
no particular theme for the parade; all we ask is that you DO NOT HAVE A SANTA CLAUSE in/on
your entry. The only Santa is on a float at the end of the parade.
Thank you for your interest and participation in the 2012 Jennings Christmas Parade.
Don't forget to come to the Christmas Festival at the Louisiana Oil& Gas Park immediately following
the parade. There will be a huge bonfire, good food (including Gumbo Cook-Off Gumbo],
Christmas carols, Santa and a gigantic fireworks display too...
Admission is free.

Parade winners will be announced at the Christmas Festival.
Cash awards will be mailed to the winners the following week.
